By wort cooling, cold water is warmed up to 82,3°C and is stored in Hot Water Tank.
In relation to wort outgoing temperature, wort flow-through rate is controlled by frequency changer equipped pump.
STERILE WORT AERATION: (prior to transfer to fermenters)
Equipment: rough oil-removing filter, cooler-drying oven, fine oil-removing filter, very fine oil-removing filter for oily smells and steams capture, sterile filter, aeration-candle, compressor
B) PUBBREWERY SYSTEMS (Eurotech-CLASSIC):
Cooling takes place in one-stage heat-exchanger equipped with in-line sintered stainless tube. Hot wort (96°C) is pumped from the mash tank to this multi-pass plate heat exchanger where cold water (2°C), pumped from cold liquor (water) tank, cools wort down.By wort cooling, cold water is warmed up to 85°C and is stored in the bottom unit of Combi-Tank that serves as Hot Water Tank.
STERILE WORT AERATION:
Wort cooled down to 6-8°C is aerated by sterile air through sintered tube placed in the heat-exchanger outlet pipe and then transferred to fermenting tanks.
